Ingredients:-
2 cups of spinach leaves, washed and drained
200 g of paneer (Indian cottage cheese), cut into cubes
1 large onion, chopped finely
2 tomatoes, chopped
2 green chilies, chopped (adjust to taste)
4 cloves of garlic, peeled and minced
1 inch of ginger, peeled and grated
1 tsp of cumin seeds
1 tsp of coriander powder
1/2 tsp of turmeric powder
1/2 tsp of garam masala
Salt to taste
2 tbsp of cooking oil or ghee
1/4 cup of fresh cream (optional)
Fresh coriander leaves, chopped, for garnish
Instructions:
To make the spinach puree, boil some water in a large pot and add the spinach leaves. Cook for 2 to 3 minutes, then drain and transfer to a bowl of cold water. This will help preserve the green color of the spinach. Then, blend the spinach in a blender or food processor until smooth. Set aside.
To cook the paneer, heat 1 tbsp of oil or ghee in a large skillet over medium-high heat. Add the paneer cubes and fry them until they are golden and crisp on all sides. Transfer to a plate and keep warm.
To make the sauce, heat the remaining oil or ghee in the same skillet over medium-high heat. Add the cumin seeds and fry them until they crackle. Then, add the onion and sauté until soft and golden.
Next, add the garlic, ginger, and green chilies and sauté for another minute, stirring frequently. Then, add the tomatoes, coriander powder, turmeric powder, garam masala, and salt and cook until the tomatoes are soft and the oil separates from the mixture.
Add the spinach puree and bring the sauce to a boil. Then, lower the heat and simmer for 5 to 7 minutes, stirring occasionally, to let the flavors blend.
Add the paneer cubes and gently stir them into the sauce. If you want a creamier texture, you can also add some fresh cream at this point and mix well. Simmer for another 2 to 3 minutes, until the paneer is heated through.
Turn off the heat and garnish with fresh coriander leaves.
Serve hot with naan, roti, or rice and enjoy your homemade Palak Paneer.
